To make the inside of the lollipop, they add flavoring and put the candy on a puller, which pulls the candy like taffy. This puts many tiny air bubbles into the candy, making it lighter and easier to break.

The white center gets wrapped inside the multicolored veneer. Then the whole thing—all 80 pounds of it—goes into the roller, which turns the candy and stretches it out thin.
