Ingredients:
ginger, mustard seed, cloves, coriander seed, allspice, mace, dried chilies
Pickling has been used in northern and eastern Europe for centuries as
a way to preserve vegetables. Whole spices, rather than ground, should
be used for pickling. They can be added right to the vinegar, or tied
in a muslin bag and removed later. You can also try adding black or white
peppercorns, or leave out the chilies if you're not a fan of their flavor.
