A cool,
dark, dry environment is very important to preserving seeds, which
is why the processed and bagged seeds are stored in a freezer. NS/S freezers
currently hold about 2,000 varieties of corn, squash, and beans (shown here)
from 18 tribes in the region. They also conserve seeds for an additional
48 species of plants used by Native Americans, such as red-seeded watermelons,
amaranth, chiles, and devil's claw. Seeds in the freezer may remain viable
for up to 50 years.
